Ingredients

    2 cups diced crusty bread (Italian or French)
    2 cups diced and seeded tomatoes
    1 cucumber, diced
    5 leaves basil, shredded
    1 1/2 tbsp. balsamic or red wine vinegar
    1 1/2 tbsp. extra virgin olive oil
    1 shallot, finely chopped
    salt and pepper to taste

Directions

Makes 6 servings.
Mix vinegar, olive oil, shallots, salt & pepper in a large bowl. Add tomatoes, cucumber, basil, and bread. Toss lightly.

Other vegetables can be added as desired--it's a great way to use leftover bread and fresh veggies.

Let sit for at least 15 minutes before eating.

    Very good basic bread salad recipe from which to start. I added marinated artichokes, Greek olives, capers and a bit of fresh parsley to mine. Loved it - 9/15/12
