Ingredients

    Apples, fresh, 1 medium, thinly sliced
    Ambrosia custard light, 425 g (1 can)
    Warburton Fruit loaf, 4 slices,
    Lurpak lighter, 2 dsp (20ml)
    Zest from 1 lemon
    Zest from 1 orange

Directions

Spread the lurpak lighter onto each slice of fruit loaf, then cut each slice into 4 triangles. Place half of the slices into the base of an oven dish.

Bring a small pan of water to the boil, add the zest and boil for a minute or so, then drain and reserve the zest. This will help to reduce any bitterness in the zest.

Layer the thinly sliced apple over the top. Finish with a layer of the fruit loaf slices.

Whisk the custard with the zests, and pour over.

Bake at 180C for about 20 - 25 mins until golden brown on top.
