Introduction

You can use any mix of vegetables you have on hand. You can easily cut recipe in half if you wish. You can use any mix of vegetables you have on hand. You can easily cut recipe in half if you wish.

Ingredients

    1 lb. venison sausage
    2 T. oil
    2 qt. fresh snapped green beans
    2 cups sliced carrots
    5 cups sliced potatoes
    3 cups chopped cabbage
    3 cups sliced onions
    9-1/2 cups sliced summer squash.
    1 T. seasoned salt or to taste
    water as needed

Directions

In two large skillets, divide the sausage and oil. Brown sausage. Add green beans and carrots. Stir-fry for about 1 minute. Add potatoes and fry for another minute or two. Add cabbage and onions. Add a little water if needed to keep from sticking. Season to taste. Cover to allow steam to collect. Keep stirring every so often until potatoes are almost tender. Add squash. Contine to stir occasionally and then cover skillet until squash is just tender and other vegetables are done. Makes about 16 cups.
