Ingredients

2 tbsp fat-free sour cream
2 tbsp low-fat buttermilk
1 large egg
1/3 cup of whole wheat flour
1/2 cup of oat bran
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups mashed banana (appx 3 med bananas)
2 tbsp brown sugar
1/2 cup fresh or frozen blueberries
1/2 tsp of grated orange zest (optional)
Directions
Preheat oven to 375F. Spray standard muffin pan with nonstick cooking spray (I use silicone pans to avoid that).
In medium bowl, whisk together the sour cream, buttermilk, and egg. In a second bowl, stir together the flour, oat bran, baking powder, baking soda and salt.
In third large bowl mash bananas with fork, potato masher, or your hands. Fold sugar into mashed bananas. Add buttermilk mixture and combine well. Sprinkle flour mixture over banana mixture, fold to combine, being sure not to overmix.
Gently fold in blueberries and orange zest. Spoon batter into muffin cups filling 3/4 of the way.
Bake at 375F for 15-20 min or until toothpick comes out clean.
Freeze in air tight container, freezer bag or individually wrapped for up to 2 months. For best results freeze immediately after baking and cooling.
