Introduction
This is a sweet, creamy, spicy salad that has enough punch to be the centerpiece of a meal but is low calorie enough that it works as a side dish. For dinner, I like to serve it with a plain grilled chicken breast to add protein to the meal. Ingredients

1 bag of pre-washed lettuce (or 3 cups of whatever your favorite lettuce is.)
1 medium apple, chopped into small pieces (I often will use the bagged and pre-cut apple pieces.)
1/4 cup of salsa or pico de gallo
2 slices of light laughing cow cheese
2 tablespoons of fat free italian salad dressing
Directions
Cut the apple up into bite-size pieces
Cut the laughing cow cheese up into very small pieces, trying to get get about 9 or so from each slice
Put the lettuce in your salad bowl. Add the salsa, cheese and apple and mix. add two tablespoons of fat free Italian dressing (optional).
Makes two relatively large salads. I've found this and a piece of lean protein is enough to make a great dinner. If you're meal is having two side dishes, I've found this same recipe makes enough for 4.
