Introduction

Served cold, this is a tasty salad. You can also exchange the sesame oil dressing for two tablespoons of oyster sauce for some variety. Served cold, this is a tasty salad. You can also exchange the sesame oil dressing for two tablespoons of oyster sauce for some variety.

Ingredients

    2 oz of Buckwheat soba noodles or whole wheat spaghetti
    1/2 cup of frozen peas
    1/4 cup of edamame
    1 scallion, sliced
    1/2 tbsp of sesame oil
    1 tbsp of soy sauce

Directions

1) Prepare soba noodles according to the directions on the package
2) Microwave the frozen peas and edamame until warm
3) Roughly slice scallion and add to prepared peas and edamame
4) In small bowl, whisk together the sesame oil and soy sauce until well blended
5) Drain noodles and mix together with dressing and veggies.
3) Chill in fridge and eat as a side or alone as a salad.
