Introduction

This is so simple and you don't need to stand over it while it cooks. Everyone in the house loves it, except the 3yr old lol. The rest of my children actually beg me to make it! Number of Servings: 8

Ingredients

    2lbs of cube steak
    1 can of Ro*tel mild diced tomatoes & green chilies
    1 red sweet pepper or you can put 1/2 red and 1/2 green
    dash of Lawry's season salt on each steak
    dash of fresh cracked pepper on each steak
    1/4 white onion (yellow onions are great too)
    1 Tablespoon corn starch
    1 cup cold water


Directions

Heat large fry pan with 1 tablespoon olive oil
Add chopped onion and peppers
Saute until just tender

Season the steaks on one side with a dash of Lawry's and a dash of fresh cracked pepper

Push the peppers & onion to the side of pan and brown the steaks on both sides
After steaks are browned add the Ro*Tel and mix the peppers and onions back over the steaks.
Let simmer for about 15 minutes

Remove the steaks
Mix 1 Tbsp corn starch into 1 cup cold water
slowly pout the corn starch mix into the liquid that the steaks left. Mix in well and then bring to a boil for one minute while constantly stirring.
Turn off the heat, add the steaks back into the pan, cover with the gravy
Get ready to eat!

When you purchase cube steak it is already in serving sizes
A serving is one steak.

    we did enjoy this recipe. However, we are not spicy food people. I didn't realize how spicy ro*tel was so next time we will use just diced tomatoes. But my family did say there would be a next time(lol). Thank you for the wonderful recipe - 9/7/09

    I'm sure it would be great with either plain or cilantro & onion diced tomatoes.

    My husband and I loved this it was so good,we even thought the sauce would be good with chicken. Will have it again! - 8/6/09

    I am soo glad. You're right about the chicken or any kind of meat for that matter. I like this recipe because it's a pretty much "use what ya got" recipe :) Oh , my calorie count is actually lower because we never use all the gravy. I'll post a chicken breast recipe kind of similar to this later
