Introduction

Ingredients

    1 Thomas' Whole Wheat English Muffin, split
    1/4 cup Kraft Shredded 2% mexican 4 cheese blend
    1/4 cup Old El Paso refried beans, fat free
    2 T Old El Paso Taco Sauce
    1/4 cup diced tomato

Directions

Makes 2 mini-pizzas (1 serving)

To prepare:
Split English muffin in two halves.
Spread one tablespoon of taco sauce on each half muffin.
Spread 1/8 cup refried beans on each half muffin.
Sprinkle 1/8 cup shredded cheese on each half muffin.
Bake or microwave.

Oven Directions (recommended):
Put mini-pizzas on a pan and put into preheated 350 degree over. Bake 5-8 minutes until muffin is toasted on the bottom and cheese is melted.

Microwave Directions:
Microwave on high for 1-2 minutes until cheese is melted. The muffin doesn't get toasted, so pre-toasting the muffin may make it better.

Top with diced tomato.
Serve.

Alternate variations:
Sprinkle with fajita seasoning, crushed or whole red pepper, or cumin.
Add left over taco meat.
Substitute salsa in place of taco sauce.
