Tangy and healthy way to flavor your salad veggies. Sage derives from the Latin "salvare", which means to heal or to save; and Rosemary - used religiously for remembrance of those passed on - can actually help your thinking and memory. Sage derives from the Latin "salvare", which means to heal or to save; and Rosemary - used religiously for remembrance of those passed on - can actually help your thinking and memory.

Ingredients

    Tomato, slided in wedges
    Cucumber, sliced thinly
    Red Onion, sliced
    Sage leaves - I like lemon sage
    Twig of Rosemary
    1/3 cup vinegar
    1 tsp salt
    1 cup cold water

Directions

Warm vinegar to dissolve salt, remove from heat. Add water and let cool.

Place veggies and herbs in quart jar. Pour vinegar over veggies and seal jar.

Rotate jar to coat all veggies. Set jar on counter on side and rotate while cooking dinner to ensure all veggies get marinated. Allow veggies to marinate 1 hour. You can store them in the refrigerator for up to 2 weeks.

Serve veggies over greens - no other dressing needed.
