Ingredients

    Pesto Sauce
    1 cup fresh basil leaves
    3 tbsp. extra virgin olive oil
    Handful of pinenuts
    4-6 cloves of garlic

    1 lb. of Chicken breast, no skin
    1 tomato sliced thinly
    8 oz. skim milk mozzarella cheese

Directions

Preheat oven to 375 degrees. Prepare pesto sauce by combing basil, pinenuts, and extra virgin olive oil in food processor/blender. Next, place 1-2 tablespoons of pesto on bottom of a non-stick pan. Next place chicken breasts on top of the pesto mixture. Next spoon the rest of the pesto mixture over the chicken. Cook for 40-45 minutes. Then, take the sliced tomato and place it on the chicken. Sprinkle all chicken with the mozzarella cheese and cook for approximately 10 minutes. Serve hot. Makes enough for 4 servings.

    I usually bake the chicken with just the pesto and maybe a bit of shredded mozzarella, but the addition of the sliced tomatoes is brilliant! Cannot wait to try this! - 8/9/09
