Ingredients

    1 15 oz can black beans
    1 12 oz can whole kernel corn
    1 medium tomato, finely diced
    3 green onions, finely diced
    1/4 c lime juice
    1 t cumin powder

Directions

Drain and rinse beans and corn. Combine in a medium bowl with diced tomato and onion. Mix and add lime juice and cumin powder.

Makes est. 8 - 1/2 c servings

    We made this and it was really good. We did not do seperate cilantro, onions and lime. Instead I got the Rotel that had it in it. It was Yummy as a filling for omlets, but next time i will do the seperate ingredients as I think that would give it even better fresher flavor. YUMMY!!!! - 8/23/09
