Introduction

This is a refreshing salad and a great way to get your veggies in. This is a refreshing salad and a great way to get your veggies in.
Number of Servings: 12

Ingredients

    3 Large Cucumbers- peeled or not peeled and thinly sliced
    1/4 Cup Sugar (or Splenda)
    2 Teaspoons Cider Vinegar
    .25 Cup Onions- I use green and thinly slice
    1 Tablespoon dried Dill- or to taste
    1 Cup fat free mayo

Directions

Slice cucumbers as thin as possible. Add all ingredients to a large bowl and mix well. Chill for at least an hour before serving- this is important. It may seem dry when mixing but the vinegar will pull the water out of the cucumbers and it will blend into a nice creamy texture. Feel free to adjust the amount of onions and dill to your preference. I prefer green onions- or even chives because I'm not a huge onion fan but red onions work nicely too. This makes 12-16 1/2 cup servings- depening on how big your cucumbers are and how much onion you use. Sitr well before serving.

    I made your salad tonight, but didn't use the fat free mayo, cause I didn't have it, but my whole family loved it!! Thanks, I've added this as one of my new favorite cucumber salad recipes - 8/24/09

    I think it would be just fine without the mayo too. The mayo makes it creamy but I've tried other salads with vinegar and those were good too.
