Ingredients

Spinach, fresh, 600 grams
Potato, raw, 2 medium
Garlic, 4 cloves
Butter, salted, 4 tbsp
Sour Cream, 4 tbsp
Water, tap 2 cup (8fl oz) if tap is not good then use bottle
Directions
Wash and clean the fresh spinach.
Peel the potatos and cut in big chunks.
Take a large pot and heat. Add the butter to melt, then add the chopped potatos and spinach. Cook for 5 mns or so, until the spinach gives its juice.
Add the water and pour as much as needed, enough to cover the vegetables and a little more.
Bring to a boil then reduce to simmer for 20 to 25 mns, or until the potatos are cooked. Use a hand blender/liquidisor to mix your soup.
Pour into individual bowls
Add a dash of sour cream, chives and salt & pepper to taste.
