Number of Servings: 24

Ingredients

    -4 egg whites
    -1 whole egg
    -1 tsp vanilla extract
    -2 apples (chopped and cooked with low heat, until it turns into apple sauce 30 min-1 hr)
    -3 large bananas (mashed
    -3 cups grated zucchini (drained)

    -1.5 cups Whole wheat Flour
    -0.5 cup old fashioned plain oatmeal
    -2 tsp cinnamon
    -1 tsp nutmeg if you'd like
    -dash of salt
    -1 cup chopped walnuts (u can switch for other nuts or not add it at all)


    serving: 24 (12 per loaf)


Directions

set oven on 350 C

beat eggs with vanilla
add apple sauce and bananas
add zucchini until mixed well
add dry ingredients as you mix
Bake for about an hr or until a toothpick comes out clean
You should get two loaves(12 slices each) and can freeze/share one :)

    This yummy bread is naturally sweet, so it doesn't need extra sugar. It ended up a little chunky (next time I will puree the apples, bananas, and zucchini) and flat (I might add baking powder to make it rise). I used only egg whites, no nuts, and dash nutmeg and the calories lowered to 50! - 8/30/09

    O.K.
    I suggest blending the zuccini so that it's not in chunks in the bread. It is clearly visible in the bread, so it's hard to get past eating it with strands of grated zuccinni.
    Wasn't very sweet. I was expecting a little sweeter. But it was okay over all. Not sure if I will eat it.
