Introduction

This is a great variation on a cold pasta salad if you want something a little spicier. This is a great variation on a cold pasta salad if you want something a little spicier.
Number of Servings: 10

Ingredients

    Half a box of rotini pasta
    Can of corn
    Can of black beans
    4 stalks of celery
    Half a green pepper
    Small head of broccoli
    Half a raw onion
    1 diced jalapeno
    half an avocado, chopped
    cilantro to taste
    about 1/4 jar of spicy queso
    about 1/2 cup of pace or other salsa
    green tabasco to taste
    cumin, garlic powder, onion powder, and pepper to taste

Directions

Cook pasta (I cook it with diced garlic for flavor) and drain and rinse and make sure it's room temperature. Add all veggies and beans and mix. Add jalapeno, cilantro, and spices, and mix again. Then mix in the queso and the salsa. Chill overnight if you can stand it!

Makes about 10 generous side dish servings. Also great as a main dish with chicken - grill it with the tabasco, cumin, onion and garlic powder, and pepper, and mix in.

For people not into spicy stuff, you can omit the jalapneo, use mild queso, and tabasco.
