Introduction

My husband makes California Roll and I love the imitation crab and cucumber together, so I came up with this great summer salad. My husband even loved it. Number of Servings: 6

Ingredients

    1 cup Imitation Crab Meat (chopped)
    1 cup Cucumber (chopped w/large seeds removed)
    1 cup Egg Noodles (cooked)
    2 tbsp. Low Fat Mayonnaise
    1 tbsp. Dill Relish
    1 tsp. Honey Mustard
    2 tbsp. Colby Jack Cheese (shredded) [optional]

Directions

Chop crab meat and cucumbers into small pieces.
Mix all ingredients together. Salt & Pepper to taste.
You can also play with other spices also to your liking.
Using Fat Free Mayo and omitting the noodles will lower the calorie/fat content, but I usually eat this as a meal, so it's not too bad.
Makes 6 1/2 cup servings
