Ingredients

1c Cooked Brown Rice
1c Soy Milk (or other milk)
1/4c whole natural almonds (slice or grind after measuring, or sub your favourite nut!)
1/3-1/2c frozen blueberries (change up the berries to keep it interesting, or use dried fruit)
Cinnamon to taste
Vanilla extract
Agave or Honey or Maple Syrup to taste.
Directions
Makes 1 huge serving or two small sides. Serve with fruit, or a couple scrambled eggs (if having 1/2 a serving).
Place rice, soy milk, almonds, vanilla, and cinnamon in a pot. Bring to a boil. Reduce to simmer for 10-15 minutes until pudding reaches desired consistency. Pour into a bowl and stir in frozen blueberries, top with a swirl of sweetener and enjoy!
