Ingredients

    Baked Potato (baked potatoes), 4 potato (2-1/3" x 4-3/4")
    Salt, .5 tsp
    Ground beef, lean, 16 oz
    *Peppers, sweet, red, fresh, 1 medium (approx 2-3/4" long, 2-1/2"
    Onions, raw, 1 medium (2-1/2" dia)
    Cilantro, raw, 2 tbsp
    *sazon seasoning, 2 packets (seasoning packet of annatto and coriander)
    *Spanish Olives w/pimento - 5 servings
    Garlic powder, .25 tsp
    pepper to taste
    Egg, fresh, 2 large
    *Flour, white, 1/2-1 cup

Directions

To make the potatoes:.
Boil potatoes until fully cooked.
Drain potatoes and mash with salt.
DO NOT ADD BUTTER, OIL, OR LIQUID.
Let cool slightly.

To Make meat mixture:.
Brown ground meat, and add onions, bell peppers, garlic, cilantro, sazon seasoning, and olives, pepper to taste.
Continue to cook until meat is completely cooked.
Drain off excess fat.
Now, grab a handful of mashed potatoes, make into a bowl pressing with fingers.
Stuff the indentation with ground beef.
Cover with more mashed potatoes and smooth to make a round ball, the size of a tennis ball.
Roll ball in flour until lightly covered.
They may be frozen at this point for later use.
Dip into beaten eggs.
Use frying pan with enough oil to cover half the ball at a time.
Heat oil to frying time (375°F) and drop each potato ball into oil.
BE CAREFUL!
Cook 2 minutes or until golden brown on one side and then turn over & cook the same.
If you have deep-fryer heat oil to 375°F.
Place the potatoes in a single layer in the basket and drop into oil for 3 minutes or until golden brown.
DON'T OVERCOOK.
Deep frying is best when they are frozen.
