Introduction

This is a zesty and refreshing salsa made of only fresh fruit and vegetables and very little salt. This is a zesty and refreshing salsa made of only fresh fruit and vegetables and very little salt.

Ingredients

    6 Tomatoes (vine or plum)
    1/2 Med. Red Onion
    1 Jalepenio pepper (seeded and sliced)
    1tsp. Garlic (minced)
    1/4 Bunch of cilantro (leaves only)
    1/2C Assorted colored sweet peppers (red, yellow, orange)
    Juice of 1 lime
    1/8 tsp. Sea salt or to taste

Directions

Wash fresh vegetables and lime. Quarter tomatoes and set aside. Slice onion and peppers and set aside. Combine all ingredients in blender or food processor and pulse until desired consistency. Salsa can be served immediately or refrigerate overnight for optimum flavor.
