This is simply a lighter version of a favorite of mine!Some Coconut Cream Pies have 600 calories! But the average seems to be about 400 calories (and about 28 grams of fat!) This one lands at about 1/3 of that- enjoy! This is simply a lighter version of a favorite of mine!

Ingredients

1 C Sweet Coconut (1/4C toasted)
1 and 1/2 C -1% Milk
1/2 C Lite Coconut Milk
1 medium egg (lightly beaten)
2 TBL Cornstarch
1/4 C sugar
1 tsp Vanilla
1C Fat Free Cool Whip
One Prepared Graham Cracker Curst
Directions
Set aside your 1/4 c toasted coconut-
In a medium sauce pan- poor 1/2 C Lite Coconut Milk,
sugar, and cornstarch, stirring it over medium heat until smooth.
Then add your 1% milk- and egg-and 3/4 C coconut-
bring to a boil stirring constantly until mixture thickens into a thick pudding like mixture-
Remove from heat. Stir in Vanilla.
Pour into crust- and put in fridge until chilled.
Top with Cool Whip and sprinkle with toasted coconut.
Keep in fridge until ready to serve!
