Introduction

This is an adaptation of an excellent Spark low-fat chocolate cake recipe. I wanted to make it sugar free as well as low fat to shave off some calories. Ingredients

    2 cups Splenda
    1 3/4 cups flour
    1 1/4 cups unsweeteded cocoa powder
    1 cup non-fat powdered milk
    2 1/2 tsp baking soda
    1 1/2 tsp baking powder
    1 tsp salt
    1 cup skim milk
    3 egg whites
    1/2 cup unsweetened applesauce
    1 tsp pure vanilla extract -use extra to taste if using imitation
    1 cup boiling water

Directions

Combine dry ingredients in large bowl of electric mixer. Beat together milk, egg whites, applesauce and vanilla in medium bowl. Add wet ingredients to dry. Add boiling water and beat for 2 minutes. The batter will be very thin. Pour batter into a 13" x 9" baking pan coated with cooking spray. Bake at 350 for 30 minutes, or until toothpick inserted near the center comes out clean.
