This recipe is from the back of a fiber one cereal box. My boyfriend and I love buffalo wings but they're always fried and loaded with fat. These appeal because they're delicious, baked, and even have a bit of fiber. Sodium is on the high side, but you can tailor that with the buffalo sauce. Ingredients

    1lb. Boneless skinless chicken breast, raw cut into 20 pieces
    1/2 cup Fiber One original Cereal
    2oz. Lays Baked BBQ Potato Crisps
    3-6 tbsp. Frank's Red Hot Wings Buffalo Sauce
    1/4 tsp. onion powder
    1/4 tsp. garlic pawder
    1/4 tsp. cayenne
    1/4 tsp. black pepper

Directions

Preheat Oven to 375F

In a blender or food processor, grind Fiber One Cereal to breadcrumb-like consistency. Crush chips completely. In a small dish mix crushed chips, crumbs, and spices.

In a separate dish, cover chicken with hot sauce and toss to coat. Spray a baking sheet with non-stick spray and set aside.

Give each chicken piece a shake so it's not dripping with sauce, and then coat with the crumb mixture. Lay crumb-covered nuggets on the baking sheet.

Bake in the oven for 10 minutes. Flip the nuggets and bake for another 10 minutes. When they look nice and crispy and the chicken is cooked, voilą boneless buffalo wings!
