This vegetarian sandwich is tremendously versatile; if you don't have eggplant, simply substitute long slices of zucchini or try using some sauteed mushrooms or carmelized onions. Ingredients

*Digiorno Basil Pesto Sauce, 0.25 cup (remove)
Eggplant, fresh, 0.5 eggplant, unpeeled (approx 1-1/4 lb (remove)
*Peppers, sweet, red, fresh, 4 ring (3" dia, 1/4" thick) (remove)
*Asiago Cheese, 6 oz (remove)
Butter, salted, 0.33 cup (remove)
Healthy Way Body Conscious Bread, 4 serving (remove)
Directions
Place 4 slices of bread on work surface. Spread pesto evenly over bread; top each with slice of eggplant, slice of red pepper and 1/4 of the cheese. Top with remaining bread. Spread half of the butter over top of bread.
Place sandwiches, buttered side down, two at a time, in non-stick skillet set over medium heat. Spread half of remaining butter over top of bread. Cook for about five minutes or until underside is golden and cheese has started to melt. Flip sandwiches over; cook for three or four minutes longer or until underside is golden and cheese is melted.
Repeat with remaining sandwiches and butter.
Makes 4 sandwiches.
