Number of Servings: 8

Ingredients

    1 lb red potatoes, boiled and drained
    2 tbsp butter
    2 tsp minced garlic
    1/2 cup sour cream
    1/2 cup green onions, chopped to preference
    1/2 lb of bacon, cooked and crumbled
    2 cups of cheese of choice

Directions

Mash potatoes after boiled and drained. Mix in garlic, butter, sour cream, green onions, bacon, and 1/2 of cheese.

Place in casserole dish, cover with remaining cheese. Bake in 350 degree oven until cheese is melted on top. Enjoy!

    Very Good
    Used FF sour cream, reduced the amount of bacon and used only 1.5 cups of 2% cheese to try and cut back the calories & fat (way high, and it is a small serving, too!). Next time will use only 1/4 or 1/3 c. sour cream - was a little strong on the sour cream taste for me. We all liked it! - 2/4/10
