Introduction

I made this oatmeal cookie for the morning dash out to work. I dislike morning cooking, but like to eat oatmeal daily. I bake these on the weekend and have them ready for the workday mornings. Ingredients

    16 tbsp Smart Balance Buttery Spread
    1 teaspoon Vanilla
    5 mashed up bananas
    1 cup brown sugar
    1/3 cup semi-sweet chocolate chips, melted or softened with the butter spread
    2 teaspoon baking soda
    1 cup whole wheat flour
    1/3 cup pecan halves
    1/2 cup nonfat powdered milk
    6 cups oatmeal, Quacker Old Fashion

Directions

Soften Buttery Spread and chocolate chips in mixing bowl in the microwave. Add bananas, vanilla, flour, brown sugar, baking soda, pecans. Add the oatmeal last. Mix ingredients, spread out on a greased cookie sheet, cook for 25 minutes at 375 degrees.
Use a pizza cutter or just break them into breakfast bars.
