Introduction

These basic crepes are a great twist on regular pancakes and can be filled for dessert. These basic crepes are a great twist on regular pancakes and can be filled for dessert.

Ingredients

    2 large eggs
    2 tbsp. sugar
    2 tbsp. cooking oil
    1 c. skim milk
    1/5 c. buttermilk
    1 c. flour
    pinch each of baking soda and baking powder

Directions

Whisk together eggs, oil, milk and sugar. Add in flour and a pinch each of baking powder and baking soda. Whisk together until well blended.

Pour 1/2 cup of batter into nonstick pan over med/high heat. Gentle roll pan gently side to side to spread batter. Cook about 2 min. per side.
