    1-15 ounce can of unseasoned black beans
    OR 1 1/2 cup cooked beans, any color

    5 large eggs

    1 tablespoon pure vanilla extract

    1/2 teaspoon salt

    4 Tablespoons unsalted butter

    2 Tablespoons Lowfat Cream Chese

    1 1/2 cups Splenda

    6 tablespoons unsweetened cocoa powder

    1 teaspoon aluminum-free baking powder

    1/2 teaspoon baking soda

    2 Tablespoons strong coffee


Preheat oven to 325 degrees.

Blend everything in the food processor and bake in a parchment lined, greased 9-inch cake pan.

Cake is done when a toothpick comes ut clean.

Frost with low carb buttercream icing.

  • This was our first "b'day cake" since going low carb, SF. Very moist! Family liked! My only critique is that the recipe needed more detailed directions. I accidentally found it on another website - Healthy Indulgences - with a few changes. Really enjoyed this. - 10/31/11
