Introduction

Ingredients

1 tsp Vanilla extract
3 Bananas, mashed
2 Eggs
2 unsweetened applesauce cups (or 222 grams)
1/2 cup Honey
1/2 cup Granulated Sugar
2 1/2 cups flour (I used wheat pastry flour)
1 tsp Baking Soda
1 tsp Baking Powder
1/2 tsp Salt
2 tsp Pumpkin Pie spice
1 tsp Cinnamon, ground
1 can Pumpkin 15oz (I used Libby's pumpkin small 15oz can)
**Nuts & raisins are optional addins
Directions
Preheat oven to 350, mash bananas. Spray pans will cooking spray.
In a mixing bowl mix all the WET ingredients plus the sugar.
In a seperate bowl mix all the remaining dry ingredients. Add to the wet bowl and mix well.
Pour about 1/2 full in each mini loaf pan. Should make 7 mini loaves depending on how much you fill each one. DO NOT make in big loaves doesn't seem to cook through well. If you try this and find a temp and time that works please post it on the reviews so I can add it here :)
Cook until a toothpick comes clean about 35 mins
Makes 7 mini loaves. 1/2 loaf per serving.
