Introduction

This is a very bright, fresh, and refreshing salad - great as part of a tapas meal, or a snack. This is a very bright, fresh, and refreshing salad - great as part of a tapas meal, or a snack.

Ingredients

    1/4 of a large watermelon, sliced into 1/2" cubes
    1/2 cup arugula
    1 Tbsp pine nuts
    1 oz very thinly sliced prosciutto, cut into small pieces
    1/4 cup reduced fat feta cheese
    Pinch of crushed red pepper
    Salt and pepper to taste\
    4 Tbsp balsamic vinegar (or, alternately, just use a very fine, aged and thick balsamic vinegar)

Directions

Toss together the watermelon, pine nuts, prosciutto, feta, crushed red pepper, and salt and pepper. Only add the arugula when you are ready to serve, to that it does not become soggy.

In a small skillet, reduce balsamic vinegar over medium heat until it has thickened to about 2 Tbsp's worth. Drizzle it over the salad and serve!
