Ingredients

1 cup lentils
4 cups water
1 tbl. oil
1 medium yellow onion diced
2 cloves garlic minced
1 to 2 jalapeno peppers finely diced
1 cup cubed firm tofu
1 tsp. sea salt
1 tsp. white pepper
1 tbl ground cumin
2 tbl fresh grated ginger
1 large tomato chopped
1 cup fresh green peas
juice from 1 lemon
1 tbl cumin seeds
Directions
1. Combine lentils and water and cook for 30 minutes or till tender.
2. While lentils are cooking, heat oil in medium skillet and saute onion, garlic, diced peepers, tofu, salt, peeper ground cumin and ginger. Cook until onions are soft and tofu is lightly browned.
3. Add chopped tomato, peas, and lemon juice to the vegetables and cook until peas are tender. Add to lentils and garnish with cumin seeds.
