Ingredients

    1 pound jennie o smoked turkey sausage(cut into 1 inch pieces
    16oz jumbo shrimp cooked
    2 cans diced tomatoes undrained
    1/3 red bell pepper (chopped)
    1/3 yellow bell pepper (chopped)
    1/3 onion (chopped)
    3 garlic cloves(chopped)
    3 tbsp extra virgin olive oil
    1 tbsp fresh cilantro
    2 cups long grain rice

Directions

Heat olive oil on medium heat, add chopped red pepper, yellow pepper, onion, garlic cloves cook until onions appear clear. Add smoked sausage and cook 3-5 min . Add 1 1/2 tbsp of flour to make a roux. Add 2 cans of diced tomatoes cook for 5-7 min. Then add shrimp turn heat on low and cook shrimp for 3-5 min or until they curl up season to taste. Serve over rice. Makes 6 servings

    Really good and really easy. My family likes things a little spicier than this, so I used a spicier sausage and added some creole seasoning to taste. - 8/24/16
