Introduction

This recipe originally called for whip cream, olive oil, and regular swiss cheese. I substituted evaporated skim milk, spray olive oil, and 2% swiss cheese to reduce calories from over 700 to 351 per serving. Ingredients

    4 boneless, skinless chicken breasts (5 oz. each)
    paprika, salt and pepper to taste
    Olive oil cooking spray
    1-7 oz. can whole green chiles
    1 cup evaporated skim milk
    1 T. chopped fresh parsley
    1 t. freshly ground pepper
    1/2 cup grated 2% swiss cheese
    2 cups cooked brown rice

Directions

Preheat oven to 325'. Remove all visible fat from the chicken breasts. Sprinkle with paprika, salt and pepper to taste.
Spray skillet with cooking spray. Heat until it almost smokes over high heat, but do not let it burn. Add chicken and brown lightly on each side. (Add more cooking spray if necessary)
Transfer to 9X13 glass casserole. Arrange chiles over chicken. (or cut chiles into 1/2 inch squares and sprinkle over chicken)
Whisk milk, parsley pepper and salt together in a bowl. Pour over chicken. Sprinkle with grated cheese.
Bake until chicken is tender, basting with sauce in the dish. ( bake to 165', remove from oven, tent with foil and let rest a few minutes. Carry over cooking will bring chicken to 175' doneness.)
Place 1/2 cup rice onto plate. Top with chicken and sauce. Serves 4 Enjoy!

    Very good! Will make again. Put a dollop of plain yogurt on top for a "sour cream" treat! Yummy!! - 10/20/09

    I had to do some improvising...Didn't have evaporated milk so I used skim milk with a tbsp of corn starch, and canned diced green chilies. Still turned out pretty good, though the sauce was lacking in flavor (could have been my improvisation). Will make again with proper ingredients. - 9/3/09

    this sound great do you cook the rice under the chicken ?
    i think that it may work to cook it with the chicken but wanted to ask.. i may add some borccoli as i have a ton of it in my garden ..thanks going to try it out soon it may be dinner tonight !!!

    Yes, the rice is cooked separately.

    The cheese helps make it taste richer, but you are right; if calories are not an issue, cream is the best flavor.
