Number of Servings: 6

Ingredients

    2 carrots
    2 ribs celery
    1 medium onion
    2 cloves garlic, minced
    2 ham shanks
    2 cups dried split peas
    2 tbsp olive oil
    1 bay leaf
    1 tsp dried thyme
    1 tsp dried oregano
    1 tsp dried basil
    2 tbsp flaxseed meal
    4 cups low sodium beef broth
    4 cups water

Directions

1. Cut carrots, celery, and onion into small 1/4 inch pieces. Place in slow cooker with garlic.
2. Add remaining ingredients. Cover
3. Cook on High for 6-7 hours.
4. Remove ham shanks. Shred meat from bone and return meat to pot.
5. Stir. Serve immediately.

Makes 6 servings

Personalize it! You can add other vegetables for variety, or use ham hocks instead of ham shanks. To reduce sodium, use only one ham shank (I like a really meaty soup). Leave out ham for a vegetarian treat.
