Introduction

Ingredients

1 Large Onion, chopped
1/2 Cup Light Margarine
2 1/2 Cups hot water
2 Cans Cream Style Corn
4 Medium potatoes, peeled and cut into 1/2-inch pieces
2 Cups skim milk
1 1/2 tsp salt
3/4 tsp black pepper
Directions
In a soup kettle or large saucepan, saute onion in butter until tender. Add the water, corn and potatoes; bring to a boil. Reduce heat; cover and simmer for 16-20 minutes or until potatoes are tender. REduce heat to low. Stir in the milk, salt, and pepper. Cook for 5-10 minutes or until heated through, stirring occasionally. Makes 8 1 cup servings.
Is good with grated cheese sprinkled on top too!
