Ingredients

3/4 cup - 365 Organic Soy Sauce
1/2 cup - fresh lemon juice
1 TBSP - freshly grated/minced ginger root
1 block - Organic Firm/Extra Firm Tofu, well pressed and cut into 1 inch cubes
2 TBSP - Extra Virgin Olive Oil
1 bunch of broccoli, chopped
2 carrots, sliced
1 bell pepper (any color), sliced
1 cup - fresh snow peas
1 cup - fresh mushrooms (any kind), sliced
3 green onions (scallions), sliced
Directions
1. Whisk together soy sauce, lemon juice, and ginger together and marinate tofu cubes for one hour.
2. In a wok add the olive oil and cook the broccoli, carrots, bell pepper, and tofu over high heat and stir.
3. Add the snow peas, mushrooms, green onions (scallions) and the leftover marinade from the tofu. Allow to cook for a few more minutes. The vegetables should be tender, but not soft.
4. You may add some brown rice to the dish and cook just until heated through and it's well mixed.
