Italian herbs and cheese mixed with fresh garden zucchini. Italian herbs and cheese mixed with fresh garden zucchini.
Number of Servings: 4


    4 T. Chopped Parsley
    2 t. minced garlic
    4 T. Chopped Basil
    1/2 cup shaved Parmesan Cheese
    1/2 cup Panko Breadcrumbs
    1 c. thinly sliced Zucchini
    4 oz. shredded Mozarella
    2 T. olive oil


1. Mix parsley, garlic, basil & parmesan in a small bowl.

2. Mix 2 T. of garlic mixture with breadcrumbs in a seperate bowl.

3. Spray baking dish with non-stick spray.

4. place layer of Zucchini in baking dish. Top with layer of mozarella, then layer of garlic mixture. Continue unti lall ingredients used. Top with breadcrumb mixture. Drizzle olive oil over top.

5. Bake at 400 degrees for about 15 minutes - until top is browned.
