Introduction
This was one of those 'throwing stuff from the garden together to use it up' things. Turned out quite yummy if you like cream sauces like I do!! Ingredients

2 boneless, skinless chicken breasts, flattened
blackened seasoning (see below)
1 Tbsp olive oil
1 Tbsp onions, chopped
1 clove garlic, chopped
1 cup chicken stock
1 cup red cooking wine
1/2 cup sweet red pepper, chopped
10 cherry tomatoes, cut in half
1 can evaporated milk
8 oz. mini bow tie pasta
blackened seasoning:
2 teaspoons ground paprika
4 teaspoons dried leaf thyme
2 teaspoons onion powder
2 teaspoons garlic powder
1 tablespoon granulated sugar
2 teaspoons salt
2 teaspoons black pepper
1 teaspoon ground cayenne pepper, or to your taste
1 teaspoon dried leaf oregano
3/4 teaspoon ground cumin
1/2 teaspoon ground nutmeg
Directions
Sprinkle blackening seasoning on both sides of chicken. Place in skillet sprayed with cooking spray and sear on both sides, then reduce heat and cook until juices run clear. Remove from pan. Add olive oil to pan with drippings. Add onions and garlic. Saute until tender. Pour in chicken stock and cooking wine. Add pepper and tomatoes and simmer until reduced (about 15 min). While this is simmering, cook pasta according to directions. When liquid is reduced, add evaporated milk and simmer until slightly thickened. Serve sauce over chicken and pasta.
For the blackened seasoning: Put all ingredients in a jar and shake.
