Ingredients

4 boneless/skinless chicken breasts, approx 5 oz each
1 10 oz block frozen spinach
1 cup Basil and Tomato feta cheese
1 tsp olive oil
1 tsp butter
2 cloves garlic
2 TB lemon juice, divided.
Directions
Thaw the spinach in the fridge or microwave and drain. Squeeze as dry as possible with cheesecloth or paper towels.
Pulse garlic cloves in food processor until finely chopped. Add spinach and cheese and pulse 10-12 times until well combined. Add lemon juice and pulse 1-2 more times.
Pound chicken breasts until they are a uniform 1/4" thickness. Spread 1/4 of the cheese and spinach mixture on each breast. Roll up and secure with toothpicks.
Pre-heat the oven to 350.
Heat a large oven-safe skillet over medium high heat. Coat pan with olive oil and melt butter in the oil. Brown the chicken on each side until golden.
After browning, put the whole pan in the oven to finish until chicken is cooked through - about 15 more minutes. Let chicken rest for at least 5 minutes after removing from oven.
Squeeze remaining lemon juice on top and serve whole, or slice for presentation.
