Ingredients

Pastry -
1 c. flour
6 T butter
1 t salt
1/2 t. pepper
4-6 T ice water
Quiche
6 eggs
1/4 c. 1% milk
1 c. cooked chorizo (Mexican Sausage)
1 c. cubed, cooked potato
1 c. chopped onions
1 cloves of garlic, crushed
1/4 c. grated extra sharpe cheddar cheese
Directions
PASTRY - Cut the butter into cubes and mix it with the flour until the mixture resembles course sand. Add the salt and pepper and mix well (you can use a food processor ). Slowly add the water until a dough forms. Put into plastic and chill.
QUICHE - Using 1 T of the chorizo drippings, cook the onion and garlic until soft. Drain on paper towels.
Roll the dough out into a large circle and carefully place in a 9" pie tin. Press the edges to form a pretty edge and make sure there are no holes.
Place half the potatoes, half the chorizo and half the onions, then repeat the layer.
Cover the top with the cheese
Beat the eggs with the milk and a pinch of salt and pepper. Pour the egg mixture over the layers in the pan.
Bake for about 45 minutes to and hour - or until the eggs are well set and cheese is golden brown!
Cut into 6 pieces and serve.
