Homemade soup is always good. Here's a hearty one with wild rice, veggies and sausage (can substitute smoked turkey, chicken, etc). Homemade soup is always good. Here's a hearty one with wild rice, veggies and sausage (can substitute smoked turkey, chicken, etc).
Number of Servings: 6

Ingredients

    1 medium onion, chopped
    2 medium stalks celery
    1/2 cup diced carrots
    105g or about 4 oz diced polish sausage*
    1/4 tsp pepper
    3 1/2 cups chicken broth
    1 can (12 oz) evaporated fat-free milk
    1/3 cup all-purpose flour
    1 cup frozen peas
    *can substitute the polish sausage for: smoked turkey, chicken, bacon, etc.

Directions

Place onion, celery, carrots, sausage, wild rice, and pepper in a 3 1/2 to 4 quart slow cooker. Pour broth over top.

Cover and cook on low heat setting for 6 to 8 hours or until rice and vegetables are tender. Stir in peas in last 15 minutes of cooking.

Mix milk and flour; stir into soup. Cover and cook about 20 minutes or until thickened.

Makes 6 1-cup servings
