Introduction

A yummy, easy, casserole. I modified this from allrecipes, making it lighter. A yummy, easy, casserole. I modified this from allrecipes, making it lighter.
Number of Servings: 10

Ingredients

    1 Green bell pepper
    1 can corn
    1 medium onion
    Garlic
    1-2 lbs hamburger
    BBQ sauce-light
    1 cup cheese
    1 can diced tomato-juice and all
    2/3 cup milk
    2 eggs
    2-3 boxes of cornbread mix

Directions

Cook hamburger, drain fat. Add onion, bell pepper, and garlic, saute. Then add corn and tomatoes, saute 1 minute. Add bbq sauce.
Mix cornbread mix up, add egg, and milk to it. Spead hamburger mixture in 9 x 13 dish, spread cornbread mix on top. Bake @ 400 for 20-30 mintues.
12 servings.
