Ingredients

Chicken, rice, bagged stir-fry mix, eggs, oil, soy sauce.

Directions

Make 2 cups rice according to given directions and set aside. Cut chicken into one inch cubes and fry in oil over medium high heat until starting to brown. Remove. Add 1/2 bag of stir-fry vegetables and cook for five minutes. Add in sauce packet and cook covered for another three minutes. I personally add in more soy sauce, but that's just to taste. Add back in chicken and rice and cook for a couple more minutes, and then add in eggs. Stir and they will thicken everything up, which I think makes for a better meal. For my family it serves four.

    Good
I cut a few calories by using only egg whites and the Bolthouse farms ginger vinagrette instead of the added packet. Super easy, my family LOVED it. - 6/29/11
