Ingredients

    1 package of 12 Manicotti noodles
    1 jar spaghetti sauce of your choice
    2 large chicken breasts, diced and cooked
    16oz Nonfat Cottage Cheese
    1.5 Cups Mozzeralla Cheese
    2 egg whites
    2 tsp minced garlic
    1 package frozen spinach
    Basil (for garnish)

Directions

Cut chicken breast into small cubes and cook through in a pan. Cook Manicotti noodles acording to package directions. In a large bowl mix together, cooked chicken, cottage cheese, garlic, 1 cup mozzeralla cheese, egg whites and thawed and drained spinach. When noodles are done stuff with mixture and place in a 9x13 pan sprayed with cooking spray. Pour spaghetti sauce on top of stuffed manicotti and bake at 350 for 25-30 minutes. Sprinkle remaining mozzeralla cheese on top and cook for an additional 5 minutes. Yummy!

    Incredible!
    I modified the recipe by using ricotta cheese instead of cottage cheese, and egg substitute for the egg whites. It is a little higher in calories but still overall quite healthy. My family LOVED it!!! They licked the pan and ate what filling I didn't use by itself! Definitely make again! - 11/17/11
