Ingredients

    2 egg whites
    2 tsp red wine vinegar
    1/3 cup dry Italian Bread Crumbs
    1/2 tsp dried parsley flakes
    1/4 tsp garlic powder
    2 boneless, skinless chicken breasts 8oz each

Directions

Beat the egg whites and vinegar in small dish. Set a side. In another bowl combine bread crumbs, parsley, garlic powder. Dip chicken into egg white mixture then roll in bread crumb mixture. Bake uncovered at 375 for 20-25 minutes.

    Absolutely stunning! I changed the recipe a bit though: no breadcrumbs, 1 and a half spoons vinegar, 1/4tbs chili flakes, and freshly ground pepper. I also added all the spices into the egg/vinegar mixture. It is the most delicious chicken I have ever tasted. Looks beautiful too! - 12/10/09

    I was so excited to try this, but it was far short of spectacular. I increased the spices a bit, but the chicken was still very bland & the breadcrumb coating felt like I was eating sawdust. I re-read the recipe & I don't see where I could have done anything wrong, so this is one I won't make again - 1/9/11

    wonderful! I also add 1/4 tsp red pepper and 1/2 tsp oregano. instead of italian bread crumbs i used old world crackers crushed up - 5/3/10
