I got this recipe from the Healthy Roads Cookbook. It is a mayonnaise-free potato salad recipe that is excellent for you. Each serving is over one cup. Ingredients

    1000 g. New Potatoes (it really depends on the size of your potatoes, but for me this was 15-20 small potatoes)
    2 green onions chopped (I used jarred)
    1T Garlic
    2T Vinegar (1 white, 1 balsamic, OR 2T Red Wine)
    2T Oil
    .34 c. fresh parsley or 3T dried
    1T dried dill
    1T lemon juice
    1T black pepper
    1T Paprika

Directions

Wash and quarter the potatoes. Boil for 15 minutes. Drain well and mix with oil, vinegar, garlic, and lemon juice. Let cool. Add spices and serve and room temperature.

Makes 4 large servings. (approx. 1.34 c. each).
