Introduction

this is a gluten free, decadent chocolate cake. No one will ever know it has no flour! this is a gluten free, decadent chocolate cake. No one will ever know it has no flour!
Number of Servings: 8

Ingredients

    1 ½ cups of GF semisweet chocolate chips
    3 cups of caned chick peas (garbanzo beans) drained and rinsed.
    6 eggs worth of egg substitute
    1 ½ cup sugar
    1 ½ teaspoon baking powder
    1 ½ table spoon powdered sugar
    Raspberry preserves or Strawberry is good too!

Directions

In a small bowl melt the chips in the microwave 2 minutes on medium. In a blender or food processor combine chick peas, eggs, sugar, baking powder and mix until smooth, then add the melted chocolate blend and mix until smooth. Pour into 2 8x10 pans, bake at 350* until knife inserted 1/2 way comes out clean. Top with raspberry preserves and powdered sugar.

    I substituted some apple sauce for 1.5 cup sugar, which may be the reason it was a teeny bit too moist. But, I'm pleasantly surprised how well this tastes. My 2yr old, who has celiac, devoured it. - 3/14/10

    Very Good
    Very tasty, and very much appreciated by my newly-gluten-free friend.
    But the description says "fat free" when both chocolate and eggs have fat in them, and the nutrition information says 11 g of fat!
