1/4 teaspoon salt
1 teaspoon artificial sweetener
1/4 cup balsamic vinegar
Directions
Preheat oven to 425 degrees.
Place chicken in a 9 X 13 baking dish. Mix remaining ingredients together. With a pastry brush, brush both sides of the chicken breasts with the balsamic vinegar mixture. Pour any remaining mixture over the chicken.
Cover the pan with aluminum foil and bake for one hour at 425 degrees. Yield: 10 4 oz servings.
Like many of us, I look for recipes that I can cook once and morph into another meal later in the week. This recipe is very satisfying served with your favorite vegetable side. The leftovers are tasty cubed and served cold in a quick midweek dinner salad of your favorite greens, or added to some Chinese vegetables for a quick stir fry.
