Ingredients

3 Sweet potatoes
1 medium-large onion, diced
2 cloves of garlic, minced
1 Tbsp Olive Oil (or cooking spray)
2 Tbsp hot curry powder (I like Sharwoods)
1 Tbsp cinnamon
1/2 cup milk
Salt and pepper (optional)
Directions
Peel sweet potatoes and cut into smaller cubes. Put in a large pot and just cover with water (water should be about a half-inch above potatoes), add salt and bring water to a boil. Turn burner down to medium-high (gently boil) and allow sweet potato to cook for another 5-10 minutes.
While water is warming up & boiling, add olive oil to a pan and add onion. When onion begins to become translucent, add garlic. Stir occasionally until onion & garlic begin to brown.
Check potatoes for readiness (should be able to pierce easily/through with a fork). Add onion and garlic to water.
Using a hand blender, blend potato, onion and garlic together. Once blended add curry powder, cinnamon and milk. Blend again. Taste. Add further curry/cinnamon/milk to suit your taste. Salt and pepper if you desire.
*This is great with some aged white cheddar dropped in the middle, or a dollop of sour cream, however I have not included these in the nutritional info*
