Introduction

Ingredients

    Spinach, fresh, 1.5 cups
    Butternut Squash, .25 cup, cubes
    Summer squash, .25 cup, chopped
    Sweet potato, .25 cup, cubes
    Raisins, 1 small box (1.5 oz)
    Granulated Sugar, 1.5 tsp

Directions

Cut the 3 squashes into cubes. Place in wok (or other large frying pan) with 1/4 c. of water over low-medium heat. Cover.
Steam squash for about 5-10 minutes, until soft, but not mooshy. Remove cover and add sugar and raisins. Stir and allow to cook for another 2-4 minutes. Remove squash and set aside.
Add spinach to pan with 1T water. Steam spinach for about 3-5 minutes. Drain water.
Place spinach on plate and top with squash mixture. Salt and Pepper to taste.

Spinach can be cooked with the rest of squash (add with sugar and raisins) if you don't mind it all being mixed. I prefer the look of the colorful squash atop the dark green spinach.
