Introduction

Ingredients

    1 pkg Spanish Rice Mix
    1 lb. lean ground beef
    1 pkt. Taco Seasoning
    3/4 c water
    6 oz. fat free cream cheese
    1 (10 oz) can enchilada sauce
    8 oz 2% Fiesta shredded cheese
    3 whole wheat flour tortillas

Directions

Preheat oven to 350. Prepare rice per package directions. Brown ground beef and drain. Add taco seasoning and water, simmer. Coat bottom of 9 in round casserole dish with cooking spray. Put a thin layer of enchilada sauce in dish. Add rice, taco meat and cheese to cover bottom. Spread cream cheese on tortilla to coat thoroughly. Turn cheese side down on top of rice mixture; continue to layer until rice an beef are gone. Cover top with remainder of enchilada sauce and cheese. Cover and place in preheated oven for 20 minutes. Uncover and bake for an additional 10 minutes.
